In this updated version of the Yunan classic, I have dispensed with the layer of chicken fat on top (Crossing the brige), and instead, I briefly heat everything on the stove in a serving pot and serve the soupy noodles at the table. Another way would be to place the pot on a portable gas table stove and put everything into the pot while the stock is boiling, then turn off the heat.
