Fish puddings are popular in Portugal. This one, from an old family recipe of Maria Isabel Raposo of Ribatejo, looks dramatic and tastes delicious.

Ingredients

  • cooked fish, flaked, 350 g (¾ lb)
  • vegetable oil, 3 tbs

Method

Heat the oil with the onion, and cook until golden. Add the fish, salt, pepper and wine and cook for 10 minutes over a gentle heat, stirring all the time. Meanwhile, soak the bread in the milk and water, add the egg yolks and mix well. Then add the fish mixture and beat all together for 10 minutes (or use a blender) before folding in the egg whites, which have been beaten stiff. Pour the mixtur
