The grey mullet which are preferred in the Charentes are those of the species Liza aurata, which are called ‘oreilles jaunes’, but other grey mullet will do. Local advice is that if you are successful in finding ones which are quite free of any muddy aroma you should, when gutting them, leave the large intestine in place, since it is delicious. I have not had the chance to try this out, but pass on the tip.
