Hackbraten means chopped up and cooked, like hamburger meat. It was a daughter of the Weise family of Hamburg who introduced me to this fishy equivalent of the world-conquering meat hamburger. They use redfish, which is very popular in Germany; but other white fish are suitable. They do not themselves add smoked bacon, but agree that it is legitimate.
