Macaroni is recommended for this dish but any suitable kind of pasta can be used. The combination of pasta and fish is good. In Italy, whence the dish must derive, it is more usual to combine other seafoods with pasta, e.g. small clams with spaghetti; but Pasta con Sarde (with sardines) is a very common dish in Sicily.

  • any white fish, ½ kg (1 lb), cleaned weight

Method

Cook the macaroni in plenty of salted water, drain it, rinse it with hot water and mix it with a little oil to prevent it from sticking.

Prepare the soup vegetables, slicing the carrot, onion and turnip. Cook them all gently in a mixture of oil and water until they are fairly soft.
