  • fresh herrings, 3, filleted
  • the soft roes of the herrings
  • soft white rolls, 2, s

Method

Fry the slices of white roll in butter; this produces your grenki or fried ‘toasts’. Mix the olive oil, egg yolks, mustard, capers and soft roes. Spread the grenki with this mixture, chop the fillets of herring over them, pop them in a hot oven for 5 minutes and serve hot.
