Most countries where herring is eaten have recipes of this type. The one given here is a classic element in Danish cookery.

Ingredients

  • herrings, 4, previously fried in margarine
  • Danish or other mild vinegar, 200

Method

Lightly salt your cold, fried herrings. Combine vinegar, sugar and pepper with 3 tablespoonfuls of water, bring quickly to the boil, then allow to cool. Pour this marinade over the fish. If it does not cover them, turn or baste them later. Add also the sliced onions and (optional) cloves.
