Method

The egg yolk is the sun (sol); and Gudhjelm (God’s home) is a picturesque village on the east coast of Bornholm.

The hot-smoked herring prepared in the island are quite delicious. They are cured in the summer only, over fires of alder wood (Alnus glutinosa).
