Method

This is a cold supper meal. If you do not have the little pastry cups, you can use scooped-out tomatoes to replace them.

Cut the fish and roe into neat slices and arrange these round the edge of a serving platter. Strew the strips of dried dulse over them. In the middle of the platter arrange the pastry cups. Add to the mayonnaise the beetroot and gherkin, both diced; the mustard; and t
