Ræstur Fiskur (Rastefisk)

Small cod must be used for this preparation. Clean them and hang them in the fresh air for about 10 days. This will produce a slight degree of fermentation. (Do not try to do it in the summer, when the warmth would be too great.)

Then simply boil the fish in
