Ingredients

  • lobster shells, 1 or 2
  • water, litre (2 pints

Method

‘Pound the lobster shell into small pieces and put into the cold water along with the salt and pepper and sweet basil. Bring to the boil and simmer for one and a half to two hours. Sieve the liquid carefully so that no pieces of shell remain.
