A partan is a crab (Cancer pagurus). These can be very big. The number of servings will depend on the size. The quantities given here are right for one measuring 20 cm (8 inches) across the carapace, which will serve four.

Ingredients

  • a large crab
  • salt and pepper
  • nutmeg, 2 pinches
  • soft breadcrumbs,

Method

Cook the crab as usual and let it cool then remove all the edible parts and chop them up in a bowl. Add the remaining ingredients, after chopping up the butter, and beat all well together.

Wash the shell (carapace) very carefully and polish it inside and out with a cloth dipped in a teaspoon of salad oil. Then pack the mixture into it and brown it under the grill (the shell, of course,
