Wales is famous for its salmon trout, for which the local name is sewin. The name Welsh salmon was also applied to it in the past. It used to be so plentiful that it was not just a luxury food for the English gentry living in Wales but something which most people would eat from time to time; and there are, therefore, genuine Welsh traditions for its cookery. The most popular way of serving it was to cut it into steaks and fry these in bacon fat or butter.
