Method

The Irish Country Women’s Association have published interesting material on Irish cookery, of which my only criticism is that they are allowed to go out of print for long periods. Mrs Segrave Daly of the Goresbridge Guild contributed this recipe, which I have amplified, to the Association’s principal cookery book.
