Ingredients: 6 small cloves garlic, peeled; 2 bay leaves; 8 jalapeños (200 g), rinsed and sliced into strips; 2 cups (280 g) carrots, peeled and sliced into strips; Sea salt; 6 sprigs of dried thyme; 1 tablespoon dried oregano; ¼ cup (35 g) garlic cloves, peeled; 5 whole cloves; 2 allspice berries; ½ cup (120 ml) of apple cider vinegar; 6 pounds (2.7 kg) pork feet (ask the butcher to cut them in quarters; should be four pieces from each trotter); ½ small white onion (50 g), quartered; 1½ tablespoons dried oregano; 2 teaspoons sea salt; 2 small white onions (200 g), quartered; ½ cup (120 ml) extra-virgin olive oil

This is yet another good drinking snack. (There is actually a whole category of drinking food in Mexico called botanas.) I know “pig trotters” may sound weird, but when properly cooked, the texture of pig feet just melts in your mouth. Believe it or not, it’s one of the most popular items at our restaurant. Once you have it, you’ll probably think: Why haven’t I had pig feet before?!
