This dish is all about its toppings. It is a rib-sticking bean stew made with quick-pickled pork feet that amplify the umami flavor of the beans. When my mom comes to visit us in L.A., this is my sister Paulina’s number one requested dish. We all gather to enjoy this soup with an array of toppings and sides that only make every single bite better, until we get to the last few droplets of broth at the bottom, then all bets are off, and slurping it down, even licking the bowl, is fair game.
