What’s the difference between Oaxacan food and the food from the rest of Mexico? That’s a question I get a lot. I usually think of this soup, because it is honestly a very different kind of chicken soup than you’ll find in any other Mexican cookbook. Who would have thought to blend bread into a chicken soup? We did. Because grinding cumin, peppercorns, and dried oregano wasn’t enough. Oaxaqueños always find a way to intensify and layer our flavors to give our dishes that extra dose of sa
