Chocolate Macarons

  • Pastry flour or top flour 5 g
  • Ground almonds 70 g

Method

  1. Preheat oven to 160°C. Line a baking tray with parchment paper. Sift together flour, ground almonds, icing sugar and cocoa powder twice with a coarse sieve.
  2. Make a meringue. Combine castor sugar and egg white powder together. Beat egg whites until foamy.
