There are some very good commercial vegan sour cream products available, but if you prefer to make your own, try this recipe. You can make this soy-free by using white beans or cashews instead of the silken tofu.

Ingredients

  • ½ cup cooked silken tofu, white beans, or soaked and drained raw cashews
  • tablespoons freshly squeezed lemon juice

Method

Combine all of the ingredients in a high-speed blender or food processor and process until completely smooth. Taste and adjust the seasonings if needed.
