  • 2 red capsicums (peppers)
  • 1 green capsicum (pepper)
  • 1 red onion

Method

Preheat the oven to 160°C.

Deseed the capsicums and thinly slice. Peel and slice the onion.

Cut the chorizo into matchsticks. Mix the onion, capsicums and chorizo with the olive oil.

It’s simple and flavoursome, but that is WAY TOO MUCH OIL - so much so that I think 100ml must be a typoI I have no fear of oily food, but it’s just wasteful here. I would suggest that 1-2 tbsp (15-30ml) would be enough.

Hi Beccy - we checked and it does say 100ml in the print edition too — but we will double check with the author for their thoughts. With the price of olive oil these days, we'd agree that holding back a little on the oil may make sense!
