Huevos rancheros (WEH-vohs ran-CHAIR-ohs) is translated as “ranch-style eggs,” and if I worked on a ranch, I’d want to eat a meal like this every day. There are countless variations on the theme of tomatoes, eggs, tortillas, and cheese, but I’m betting you’ll be partial to this one-pan wonder. In this version, I’ve also included black beans for extra heft.
