This is a basic sponge mix that can be used in so many puddings. I’m using a Victoria Sponge recipe with the addition of lime in the Greengage and Lime Sponge Pie.
I thought it would be a good idea to include this recipe because it’s easy and quick to make. So if you’re really stuck for time, make this recipe and join the sponges with whipped double cream and jam. There you have a real English cake: fresh cream Victoria Sponge.
