  • 75 g (2⅔ oz) caster (superfine) sugar
  • 35 g ( oz) golden syrup
  • 5 g ( oz) bicarbonate of soda (baking soda), sifted twice


Line a baking tray with baking paper. In a small saucepan, combine the sugar and golden syrup. Gently heat, stirring constantly until the sugar has dissolved. Increase the heat and bring to the boil. Continue boiling for 2 minutes. Stir occasionally, if necessary, to prevent burning. Remove from the heat.

Add the bicarbonate of soda and quickly stir until the mixture froths up. Immediately pour onto the prepared tray and cool to room temperature. Store in an airtight container until needed.
