Freedom Sorbet Slice

This sorbet construction is very much a folly, making dessert a bit of fun and fantasy. It draws on the freedom flag, a symbol that has come to represent gay and lesbian pride in our community, and each colour is made from a fruit that most closely resembles it. On the rare occasion that it appears on our dessert list, we give this confection the title ‘Priscilla - Queen of Desserts’ as a tribute to the camp nature of the film. This is, after all, a very camp interpretation of a dessert!
