This ice-cream and sorbet construction appears on the Paramount menu to mark the Sydney Gay and Lesbian Mardi Gras festival in February and March each year. The enticing tropical flavours are formed to capture the symbol of gay pride, the pink triangle. It becomes a visual and edible feast of celebration.

Method

  1. Line a 32 cm X 7 cm X 7 cm triangular mould with baking paper; making sure the paper extends beyond the tin (this will help you remove the ice-cream from the mould later on).
  2. To make the strawberry ice-cream, whisk the castor sugar and lemon juice into the strawberry purée until the sugar has dissolved. Stir the cream into the mixture and churn in an ice-cream
