To be honest, I wasn’t sure that the concept of a savoury porridge was going to work, but I was pleasantly surprised – it’s simply a hug in a bowl. The premise is a Western twist on the typical Japanese breakfast of steamed rice, miso soup, and various accompaniments. For a touch of authenticity, serve the savoury, omelette-topped porridge with small bowls of natto (fermented soy beans) and Japanese pickles, such as umeboshi plums, on the side.
