Flavoured with coconut milk and spiced with cardamom and cinnamon, these American-style pancakes come with fresh mango and a sprinkling of pecan nuts. Canned coconut milk would be too rich for these pancakes, so use instead the ready-to-drink coconut milk found in most supermarkets alongside soya milk and the other dairy-free milk alternatives.
