Here is another warm, comfortingly sticky rice dish that is traditionally enjoyed in winter, with a rich lamb curry called qormeh gosfand. This rice is named after the Ghorband district, northwest of Kabul, where the dish originates. Qormeh gosfand is served over the rice, infusing it with the rich flavours of the sauce. Prepare the curry before making the sholah rice, so it’s all ready to serve at once.
