For this sticky rice dish, the lamb is cooked with the rice, infusing it with the flavours of the meat. A hearty and filling dish, this is typical winter fare in Afghanistan, and is occasionally used as nazr – an offering shared with others to help fulfil a certain desire or prayer. In the southern provinces, it was also traditionally served to feed large numbers of guests at weddings.
