This palaw, studded with mung beans and sultanas, was one our favourites as children growing up in Australia. The mung beans give the maash palaw a subtle earthy flavour and, with the sweetness of the sultanas, it is a balanced dish that’s hard to resist.

You need to soak the rice for at least 2–3 hours before preparing this palaw.
