These deep-fried vegetable fritters are a typical street food in Afghanistan, made by vendors who set up their large karayee pans for deep-frying on street corners. They can be made using an assortment of vegetables, such as leek, potatoes, chillies or onions, and are best enjoyed with a chutney to dip into.

This recipe uses only potato and is a favourite of my brother-in-law Sayed who, growing up in Afghanistan and Pakistan, would snack on these moreish savoury bites on his way hom
