Moutabel is a Middle Eastern dish of puréed aubergine and tahini, also known as baba ghanoush. I find aubergines have a great affinity with cheese. In this dish, aubergine halves are stuffed with a moutabel-style filling and then topped with goat’s cheese and thyme. It is one of my favourite combinations.
