This dish of simply fried sheep’s milk cheese is served as a staple in tavernas throughout the Greek islands. Its beauty lies in its simplicity. It must be one of the easiest dishes to prepare, with just three ingredients, but it is delicious - and exceedingly moreish.
Heat the butter in a large frying pan until foaming, add the cheese slices and fry for 1-2 minutes on each side, until golden. Season lightly with salt and pepper and then pour the lemon juice over the cheese in the pan. Serve straight away, with lots of crusty bread.
