This rustic Italian soup is very nourishing and quick and easy to make. All you do is pour a well-flavoured broth over slices of fried bread and then slip in an egg, which cooks in the heat of the broth. However, such simplicity relies on the finest ingredients for its success: don’t make the soup unless you have homemade stock, good country-style bread and free-range eggs.
