In this tangy salad the oranges are marinated in vinegar and sugar overnight to give a refreshing sweet-and-sour flavour. Feta is a much-copied cheese and consequently the quality and flavour vary greatly, as does the type of milk used. Always try to obtain genuine Greek feta, which is generally made of 30per cent goafs milk and 70per cent sheep’s milk.
