In this tangy salad the oranges are marinated in vinegar and sugar overnight to give a refreshing sweet-and-sour flavour. Feta is a much-copied cheese and consequently the quality and flavour vary greatly, as does the type of milk used. Always try to obtain genuine Greek feta, which is generally made of 30 per cent goat’s milk and 70 per cent sheep’s milk.
