Radicchio is a bitter salad leaf that to my mind needs a contrasting partner. The blue cheese yoghurt dressing fits the bill perfectly. You could add some chopped hard-boiled egg, potatoes and French beans to make a more substantial dish for a main course.
First make the dressing. Put the Stilton in a bowl and mash well with a fork. Stir in the vinegar, then gently whisk in the crème fraîche and yoghurt. Squeeze in the lemon juice and season to taste with nutmeg, salt and pepper, then fold in the chives.
