The classic combination of mozzarella, tomato and basil in a different guise. You can use turbot or a similar whitefish instead of chicken and it works just as well. Tomato tapenade is now available in jars in many supermarkets but I still think that home-made is better. Besides, it’s really quick to make your own. You won’t need to use all of it in this recipe but it keeps well in the refrigerator.
