You may be surprised to see goat’s cheese in an ice-cream but it gives it a delicious tanginess. The ice-cream makes a wonderful foil for cherries - try it with a warm cherry tart or clafoutis. I have included instructions for freezing without an ice-cream maker, though I believe that for fine-textured ice-creams and sorbets you do need to invest in a machine. They are quite reasonably priced now and once you have one the possibilities are endless.
