Wensleydale cheese should be eaten young and fresh and is delicious with crisp autumn fruits such as apples and pears. This pie is one of my favourite old English puddings, a traditional Yorkshire way of combining apples and cheese. In this recipe the cheese is mixed with the apples for the filling, but often it is included in the pastry instead.
