Quark is extremely low in fat and so is very useful for anyone trying to reduce their fat intake - for whom mayonnaise would usually be out of bounds because of all the oil it contains. Although this recipe includes a little olive oil for flavour, most of it is replaced by quark, resulting in an altogether healthier mayonnaise with a smooth consistency and delicate taste.
