  • 650 g (1 lb 6 oz) sweet potatoes, peeled and cut into large chunks

Method

Preheat the oven to 200°C/400°F/gas mark 6. Place the sweet potatoes in a baking tin, pour over 4 tablespoons of the olive oil and roast for 40 minutes
