Fettunta are very similar to crostini or bruschetta - crisp bread croûtes topped with all manner of ingredients. Here, baked potato slices replace the bread. They make an ideal canapé, appetiser or titbit.

Ingredients

  • 5 small baking potatoes
  • 4 tablespoons olive oil
  • 10 streaky bacon rashers, rind rem

Method

Preheat the oven to 200°C/400°F/gas mark 6. Cut each potato lengthways into slices 1cm (½ in) thick (don’t peel them) and parboil in salted water for 2-3 minutes. Drain well and dry. Place the potato slices on a baking sheet, brush on both sides with the olive oil and season with salt
