Tasty and colourful, this makes ideal summer fare, a reminder of one of the world’s loveliest destinations.
Cook the potatoes in their skins in boiling salted water until just tender, then drain and leave until cool enough to handle. Peel the potatoes and place in a bowl.
Make a dressing by whisking together the red wine vinegar, mustard and olive oil. Pour it over the potatoes while they are still warm. Mix in the remaining ingredients and leave to marinate for at least 3 hours before servin
