Ingredients

  • 750 g (1 lb 10 oz) floury potatoes, peeled and cut into large, even-sized pieces

Method

Preheat the oven to 200°C/400°F/gas mark 6. Place the potatoes in a large pan, cover with cold water, then add a pinch of salt and bring to the boil. Reduce the heat and simmer for 10-15 minutes, until almost tender.

Drain in a colander and leave for 5 minutes to dry.
