Heat the oil in a 20cm (8in) omelette pan, add the potatoes and fry for 2-3 minutes, until sealed on both sides. Add the onion and cook until both onion and potato are golden. Season with salt and pepper and add the chorizo. Cover with a lid and cook over a low heat for 20 minutes or until tender, stirring occasionally.
