You won’t need all the barbecue spice mix for this recipe but the rest can be stored in an airtight container for about a month. It is very adaptable and can be sprinkled over vegetables or rubbed on fish or meat before barbecuing or grilling.

Ingredients

  • 4 large, floury potatoes
  • Sunflower oil, for deep-frying
  • Sea salt

Method

For the barbecue spice mix, put all the ingredients in a bowl and mix until thoroughly combined.

Prepare and cook the chips as for the Perfect Fries. After the second frying, place them in a baking tin lined with kitchen paper to absorb excess oil, season lightly with sea salt, then sprinkle with about 2 tablespoons of the barbecue spice mix. Serve imm
