I found this recipe in an old cookery book when travelling through Ireland Boxty is a traditional Irish potato dish, created at a time when wheat flour was an expensive commodity so potatoes became a cheaper alternative. It can be prepared as a scone-like bread, as below, or thinned with milk and cooked as a pancake on a griddle. Both methods are delicious.
