You could describe knishes as the Jewish answer to the spring roll. They are usually filled with meat, potatoes, cheese or chicken livers and are served on Jewish festival days as a starter or canapé. Scamorza is an Italian cheese, usually smoked, and is rather like a cross between mozzarella and provolone. If you cannot find it, use provolone instead.
