  • 600 g (1 lb 5 oz) large new potatoes, preferably Charlotte

Method

Cook the potatoes in their skins in boiling salted water until just tender, then drain and leave to cool. Peel the potatoes and cut them into slices 5mm (¼ in) thick. Set aside.
