A dish to serve when you want to push the boat out - it is expensive, but why not treat yourself occasionally? A good substitute for John Dory is Alaskan halibut.

Ingredients

  • 175 g (6 oz) salad potatoes, such as Jersey Royal, Charlotte or La Ratte

Method

Preheat the oven to 200°C/400°F/gas mark 6. Cook the potatoes in boiling salted water until tender, then drain. Mash until smooth and set aside.
